3、elatin are paid much attention in many countries. But in thedrying process of gelatin, there exists the problem of long drying period and abundant energyconsumption. It is difficult to solve. Hot air drying characteristi
4、cs of gelatin has been studied inthis paper. The result can provide basis for the further research on the gelatin drying and theimprovement of process.The equilibrium moisture content of gelatin in the different air humi
5、dity was investigated bystatic method. The data of equilibrium moisture content and isotherm in the process ofabsorption and desorption were obtained. The isotherms of absorption and desorption at 20℃show that the absorp
6、tion hysteresis phenomenon exists.In order to research the drying characteristics of gelatin, the drying experiment of gelatinwas engaged in the convective drying apparatus. The gelatin blocks with different thickness we
7、retaken as object and the drying characteristics was researched in the different air temperature, airvelocity and relative humidity. The results show that in the drying process of gelatin only fallingrate period exists.
8、In the initial stage, with the increasing of air temperature and air velocity thedrying rate increases, but the drying rate in the following period decreases. With the decreasingof air relative humidity the drying rate i
9、ncreases. The thickness and air temperature have deepeffect on the center temperature of gelatin, but the hot air relative humidity has extremely smallinfluence on it. The moisture mass fraction of gelatin decreases with
10、 time as exponential function.With the increasing of air temperature and air velocity in the beginning the moisture massfraction of gelatin decreases rapidly, but the final moisture mass fraction of gelatin is higher.The
11、 orthogonal experiment was performed with the water-lost rate taken as performancetarget and the hot air temperature, air velocity and thickness of gelatin selected as orthogonalfactors. It is shown that the order of pri
